Today we smashed a pumpkin open on our driveway.
Why?
Because it was easier than trying to cut it.
I typically don't have issues cutting open or cutting up squashes of any sort, but this little pie pumpkin was not cooperating.
Why are we opening a pie pumpkin?
Not to make pie, because I don't like pumpkin pie.
To make chili.
Veggie chili.
We love it around here. We keep some in the fridge for after school snacks and when we need a single dinner for a person. We eat it plain or on noodles. We eat it in a Frito bag like a walking taco. On a potato or hot dog. Try some chili tacos. Yup. We went there.
It's just plain delicious, filling and healthy--minus some of our not so healthy add ins!
