Fall = Chili

I'm cheating today and giving my chili "recipe" as requested.  It is really more of a shopping list than a recipe, so take it and tweak it to your tastes.

Chili

2 cans of pre-flavored chili beans, one large size and one regular
2 cans of petite diced flavored chili tomatoes
2-3 zucchini and/or yellow squash, chopped
sweet onion, diced small
2-3 stalks of celery, chopped
1 regular size bag of spinach, chopped
2-3 large carrots, chopped
1 butternut squash, peeled and chopped
1 eggplant, peeled and chopped
1 pie pumpkin, peeled and chopped
hot peppers if you like it hotter
spices if you like

I don't usually add meat, but you can add ground meat of your choice.  Turkey is good in this.  I dump it all in the crock pot and let it cook all day or overnight.  If you don't typically eat chili with chips, this needs some salt.

We eat this plain, with the chili toppings-sour cream or Greek yogurt, cheddar cheese, corn chips, tacos, baked potatoes, on hot dogs--yuck!, and probably some other ways I can't think of right now.  Noodles.  On noodles sometimes.

Pretty much from the start of September until we get really sick of it, there is a batch in the fridge for after school snacks, post sports eats, on the go dinners, breakfasts--yes, breakfast and so on.

It's delicious.

I forgot. Also green pepper and some colored peppers too.
